Taleggio or stracchino, a very tasty typical cheese of Lombardy
Taleggio, or stracchino, is one of the classic examples where the product’s name comes from its area of origin. In fact it seems it’s around the tenth or eleventh century when in Val Taleggio the production of this cheese started.
It’s a unique flavour and is loved in Lombardy and beyond. Beginning from its valley’s origin, nowadays the production of Taleggio is extended to all th Lombard Pre-Alps and the flatlands of Lombardy.
Soft cheese, raw paste and washed rind, produced exclusively with whole cow’s milk. Thin crust, creamy, natural pale yellow color. It is not subjected to any surface treatment, if not the salting. The paste color varies from white to straw-yellow and is softer under the rind and then compact, without clear holes.
The characteristic smell corresponds to a mild, buttery and aromatic flavour, which drives to be very spicy in the aged forms.
Aging time: 40 days.
Shape: square mould with sides of 18-20 cm; weight 2 kg approx.
